A Note from Alexis: Harissa Spice Kale Salad

can’t say it enough, summer is my favorite time of year! I love getting together with friends and family and staying out on these warm summer nights. We love having people over for great food and drinks and one of my favorite things to make for our guests is a kale & quinoa salad. I’ll actually make it at home just for myself too! We’re big fans of kale in our household! Here’s the recipe for your to try at home. Let me know what you think!

Harissa spice toasted quinoa and kale salad

Ingredients:

  • I/2 cup cooked quinoa
  • Harissa spice
  • Salt
  • Olive oil
  • Lacinto kale
  • Juice from 1 lemon
  • 1 Shallot
  • 1 avocado

How to make it:

Toss 1/2 cup cooked quinoa with 1 pinch Harissa, a pinch of salt and a drizzle of olive oil and toast in a single layer on a cookie sheet for 15 min till lightly browned

While that’s browning remove the center from the lacinto kale and finely chop into shreds

Massage with a drizzle of olive oil and juice of half a small lemon- another pinch of harrisa and Himalayan pink sea salt

Dice 1 shallot. Slice  1/2 an avocado and mix into the kale and add the toasted quinoa last.

I love the way the Harissa spice compliments all of the other flavors. It’s pretty delicious and I promise it’ll be a hit!
