Avocado & Cucumber Soup

While the days are getting hotter and life gets a little more busy, there is nothing like a refreshing soup that is as easy to make as filling up the blender and pressing “puree” – No stove required! Here’s a recipe we love for Avocado & Cucumber Soup that’s vegan, raw, and gluten free!


  • 1 cup unsweetened, original (unflavored) almond or hemp milk
  • 4 green onions, chopped
  • 2 large avocados peeled, pits removed and diced
  • Squeeze the juice out of 1/2 a lime
  • 1/2 teaspoon sea salt
  • 1 large cucumber, peel and chop
  • 1/4 cup fresh cilantro

Toppings (optional, choose as many as you like) : Fresh Cracked Pepper, Pinch of Cayenne, Sliced Radishes, Avocado Spears, Thinly Sliced Cucumbers, chopped green onions

How to Make:

Place all ingredients (except toppings) into a blender or food processor and puree until mixture is well blended. Soup consistency, no chunks, very smooth. Chill before Serving -Great for 4 people!
